That’s a tough one. I remember hearing of an old lady who made a little money growing Asian vegetables for the local Korean restaurants. I’ll bet that there are some Thai, Vietnamese, Thai, Indian and/or Korean restaurants in your area that have a hard time procuring the vegetables, herbs and spices they need. They either have to substitute, grow it themselves, or drive a long way.
You could generate a list of such plants, then go to all the local farmer’s markets and grocers in your area to see if they have them in stock. Act like you are looking to buy, and see if there are any that can’t be obtained even on special order. Then grow those. (Of course, you’ll need to have customers lined up too, either the stores or the restaurants.)
